Pumpkin Chocolate Chip Cookies for the Hunters

This week the boys in the family are gone hunting... which means the gals in the family make them treats to take along.  And if you're my Grandma, you make a whole lot more than just treats.  These hunters eat like Kings.  I'm pretty sure they just lay around their campsite all day eating and napping.  :)

Anyways, this year I sent Pumpkin Chocolate Chip Cookies- perfect for this time of year.  They end up making more of a cake like cookie rather than a regular chocolate chip.  They're yummy!


Pumpkin Chocolate Chip Cookies

2 cups pumpkin puree
1 cup vegetable oil
2 eggs
2 cups white sugar
4 cups flour
4 teaspoons baking powder
4 teaspoons cinnamon
1 teaspoon salt
2 teaspoons baking soda
2 tablespoons milk
2 tablespoons vanilla
2 cups milk chocolate chips
2 cups mini semisweet chocolate chips

In your mixer, combine the sugar, pumpkin puree, eggs, oil and vanilla.  In a separate bowl whisk together the flour, baking powder, cinnamon and salt.  Mix the baking soda and milk and combine with the dry ingredients.  Once the wet ingredients are mixed add the dry ingredients a little at a time and mix well.  The dough will be pretty sticky.  Add the chocolate chips.  Since the dough is so sticky, it works best to use a cookie dough scooper to place the cookies on a greased baking sheet.

Bake for about 10 minutes at 350 degrees.  Makes about 4 dozen cookies.

Did Somebody Say Cake?

There's such a big build up to the whole give the babe some cake and watch her make a big spectacular mess moment.  Our little lady wasn't having any of that.  She just did a little dance while everyone sang to her and then poked her cake a few times.  She did get after it a couple times with the direct mouth to cake method... but it didn't get much more exciting than that :)

I handed the camera over to my Dad for all the messy fun- and somehow I had it set on something weird so they all turned out dark, dark, dark.  I'm pretty bummed about it.  I managed to salvage a couple.  I'm not sure what the heck we're doing here, obviously we think she needs some help with her big bite.



I'm sure her lack of interest in eating the cake had nothing to do with my baking skills.  Right?

Every Birthday Needs Cake

If you ask me, the best part of any party or wedding is the dessert bar.   The husband, Guncle Bling and I stayed up WAY too late the night before her party putting all of the finishing touches on her cupcakes, smash cake, push pops, rice crispies and chocolate dipped oreos.  Nothing like a little candy and gossip to get you through a marathon baking session.






The kiddos really loved the cake push pops.  They are pretty cute and something kinda different than cake pops which seem to be everywhere now.  I just made mini cupcakes and slipped them in  the push pop holder- perfect fit!




My Dad couldn't resist feeding her a cupcake before her party started.  He is definitely a trouble maker when it comes to her.
